This is a very versatile and quick meal. I usually keep the core ingredients on hand for those days when you really want to say "let's eat cereal," but you've already had cereal 6 times this month and it's only the 8th......
- 1 Box of classic pasta (or make your own from scratch if you're into that) cooked per package instructions
- Chicken, cooked and cubed or cut into strips. You can use rotisserie, frozen, etc.
- Parmesan cheese, grated or shredded (or both).
Mix all of the above in large bowl. This is where I mix in anything else that sounds good. Here are several ideas: Olives, onion, cherry tomatoes, mushrooms, artichokes
I usually dish it up into large pasta bowls and top it with some of the shredded Parmesan cheese and croutons. Tip: Make enough to have leftovers for lunch the next day.
